Onion Bahjias

Appetizer: Onion Bahjias (20-25 pieces)

We picked this one because who does not love onion rings! The spices added to the batter make it a new experience. “A favorite snack in India, Bhajias consist of a savory vegetable mixture in a spicy batter.”

  • 2 cups besan flour, or regular
  • 1/2 tsp chili powder
  • 1 tsp ground turmeric
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp each: cumin, onion, fennel seeds, crushed
  • 2 large onions, finely sliced
  • 2 fresh green chiles, finely chopped
  • 2 c fresh cilantro, chopped
  • water to mix
  • vegetable oil for deep frying

Slice the onions into thin slices and separate. In a bowl, mix together the flour, spices, chiles, and cilantro. Add enough cold water to make a thick batter that coats the spices. Heat enough oil to deep fry. Drop spoonfuls of the mixture into the hot oil and fry the bahjias until they are golden brown. Other veggies can be used in addition to onions.
