Last week I caught a pretty bad cold, and it was overcast and chilly. For me, fall has arrived. I was congested and knew that I needed a spicy soup to clear everything out. My sister raves about the tortilla soup that her boyfriend’s mom makes. Hot, spicy, comforting…that sounded like just what I needed.
Sadly, I forgot to take a picture of it! It was a really gorgeous soup, red broth, bright yellow squash, green zucchini, and orange carrots.
As with most soups, you can toss things in as they are prepped. Working through the ingredient list in order should give everything the appropriate cooking time.
- 1 onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 1 c carrots, diced
- 2 bell peppers, diced (your choice)
- 1-2 jalapenos, diced
- 1 zucchini, diced
- 1 yellow squash, diced
- 2 TB caldo de pollo (optional)
- 32 oz can diced tomatoes, with juice
- 2 cans el pato sauce
- 1 box chicken broth
- 1 rotisserie chicken, shredded
Garnish with lime juice, cilantro, cheese, diced avocado, sour cream, and crispy tortilla strips. Delicious! This is a really thick soup, so add more broth if desired. The spicy tomato broth has so much flavor, and just the right amount of heat to beat my cold.
