Quick Healthy Dinner: Cornmeal Crusted Tilapia

Tilapia is my new favorite fish.  It is relatively cheap, and tastes so decadent and buttery. It has been a great base for several different types of flavors.  I originally flagged this recipe to use up some of my limes, but then realized I already had a tomatillo salsa to pair with the fish. The cornmeal crust offers a nice difference in texture to the flaky fish.

Cornmeal Crusted Tilapia

  • 1/4 c all purpose flour
  • 1/4 c cornmeal
  • 1 Tbsp water
  • 1 large egg white
  • 4 tilapia fillets
  • 3/4 tsp salt
  • 1/2 tsp chili powder
  • 1 Tb olive oil

Combine flour and cornmeal in a shallow dish. Combine water and egg white in a shallow dish, stirring well. Sprinkle both sides of fish evenly with salt and chili powder. Heat oil in a large nonstick skillet over medium-high heat. Dip fish in egg mixture; dredge in flour mixture. Add fish to pan and cook 2.5 minutes on each side until flaky and done. Serve topped with a tomatillo salsa.

I served the fish and salsa with some roasted potatoes. Normally I roast the potatoes with rosemary, some parmesan.  This time I tried them with chili powder and fresh oregano.  The chili powder in the crispy potatoes enhanced the chili powder in the fish.
